Red, White, Orange, and Rosé: How Wine Gets Its Colour
Wine's colour is not determined by the colour of the grape. It is determined by what happens to the grape skins — and for how long — during and after crushing. Understanding this single principle unlocks the logic of every colour category in the wine world, from the palest saignée rosé to the deepest tannic red and the amber oxidative world of skin-contact whites.
White Wine: Pressed Immediately Off the Skins
White wine is made from white (technically green, yellow, or gold) grapes that are pressed immediately after harvest. The juice runs clear or very pale yellow; the skins, which contain no red pigment in white varieties, are discarded. Fermentation takes place in the juice alone, with no skin contact. This produces a wine whose colour derives only from phenolic compounds dissolved in the juice — typically pale straw, gold, or greenish depending on variety and age. A white wine that has spent years in barrel or bottle deepens toward amber through slow oxidation, but this is ageing colour, not skin colour.
The clarity of white wine flavour — primary fruit, floral notes, acidity — is a direct consequence of this early pressing. There is nothing from the skin to add tannin or pigment, so the wine's structure comes entirely from acidity and whatever compounds (including glycerol, from barrel fermentation or botrytis) are present in the juice itself.
Red Wine: Fermented on the Skins
Red wine is made from dark-skinned grapes left in contact with their juice during fermentation. The grape skins contain anthocyanins (colour pigments) and tannins, both of which are extracted by the alcohol produced during fermentation. Maceration time — from a few days for light reds like Beaujolais Nouveau to three weeks or more for structured wines like Barolo or Bordeaux — determines how deeply coloured and how tannic the finished wine is. Cap management (punching down or pumping over the floating skin cap) increases extraction. Extended maceration after fermentation is complete can soften tannins and add complexity.
The combination of colour, tannin, and body that makes red wine structurally capable of long cellaring comes entirely from this skin contact. Remove the skins and you have rosé or white; retain them and vary the time and temperature of extraction, and you can make everything from a pale, silky Pinot Noir to an opaque, structured Tannat.
Orange Wine: White Grapes on Their Skins
Orange wine — also called skin-contact white, amber wine, or ramato in Italian — is made exactly like red wine, except that the grapes are white. White grape skins contain tannins (though fewer than red grapes) and phenolic compounds that produce amber and orange hues when extracted. Maceration can last from a few days (producing a pale peach-tinged wine with slight tannin grip) to several months (producing a deep amber wine with substantial tannic structure, oxidative character, and profound complexity).
The key producers who brought orange wine to international attention work in northeastern Italy and western Slovenia, in the Collio DOC and Brda appellations that straddle the border. Stanko Radikon began experimenting with prolonged skin maceration in the late 1980s in Oslavia, Friuli, using Ribolla Gialla and Chardonnay macerating for up to 180 days in large oak barrels, unfined and unfiltered. His wines, often released five or more years after vintage, are among the most structured and age-worthy whites produced anywhere. Josko Gravner, also in Oslavia, went further — visiting Georgia in 2000, returning to adopt qvevri (clay amphorae) fermentation for his Ribolla Gialla and Breg (a blend of white varieties). Gravner's Ribolla Gialla, macerated for up to seven months and aged for several years in large Slavonian oak, is one of the foundational texts of modern orange wine.
Movia, the oldest winery in Slovenia's Brda DOC (the vineyard sits literally on the Italian-Slovenian border, the road marking the frontier), makes Lunar, a prolonged-skin-contact Ribolla Gialla that is riddled and disgorged at the table like Champagne — the wine is never filtered. Ales Kristancic of Movia has become one of the most visible advocates for skin-contact wine internationally.
The Georgian Qvevri Tradition: 8,000 Years of Amber Wine
The oldest wine-producing culture in the world, with winemaking evidence dating to 6,000 BC in the South Caucasus, Georgia has been making skin-contact white wine in qvevri (clay amphorae buried underground for temperature stability) for eight millennia. Traditional Georgian winemaking macerates Rkatsiteli, Kakhuri Mtsvane, Chinuri, or Goruli Mtsvane grapes — skins, seeds, and sometimes stems — in qvevri for several months. The buried vessels maintain constant cool temperatures; the grape skins and seeds slowly sink to the bottom, acting as a natural filter. The wine that emerges is amber to deep orange, tannic, oxidative, and completely unlike any Western white wine style.
UNESCO recognised traditional Georgian winemaking in qvevri as an Intangible Cultural Heritage of Humanity in 2013. The Kakheti region in eastern Georgia is the heartland of qvevri production, though Kartli and Racha-Lechkhumi also produce traditional skin-contact wines. Pheasant's Tears, Iago's Wine, Lagvinari, and Gotsa Wines are among the most internationally acclaimed producers working in the traditional style.
Rosé: Saignée vs Direct Press
Rosé is made by one of two methods, and the distinction matters enormously to the resulting style. Direct press rosé — the method used for high-quality Provencal rosés — crushes red grapes and immediately begins draining the juice, which picks up just enough skin pigment during the brief journey through the press to colour it pink. The pressing is gentle and fast, producing pale, delicate, fresh rosé with minimal tannin. Domaines Ott, Château Miraval, and Château d'Esclans' Whispering Angel are typical examples.
Saignée (bleed) rosé removes a portion of juice from a red wine fermentation early in the process — typically after six to twenty-four hours of skin contact. This produces a more intensely coloured and flavoured rosé than direct press, and simultaneously concentrates the remaining red wine (since the ratio of skins to juice increases). Saignée rosé is common in Burgundy and in regions where it is a by-product of red wine production rather than an end in itself.
The Colour Spectrum in Practice
The spectrum from white to orange to rosé to red is a continuum of skin-contact decisions. A bone-dry Muscadet with no skin contact is at one extreme; a Radikon Ribolla macerated for six months and aged for five years is at the other, with pale Provencal rosé, a three-day saignée Burgundy rosé, a light Beaujolais Gamay, a standard Bordeaux, and a massive Amarone arrayed between them. What unites all of them is the grape skin — present, absent, or somewhere in between.
